Update "Completed On" each time a partial torrent finishes downloading
I suppose it's slightly debatable whether this is really a bug, or just the way "Completed On" is meant to work, but its current functionality doesn't seem to make a lot of sense to me.
If I download part of a multi-file torrent — say, grab the first 10 files with the rest set to "Do not download" — then when that partial set of files is fully downloaded, the torrent will move into the Complete Torrents list and "Completed On" is set. That makes perfect sense.
However, if I later reactivate that torrent to download additional member files, when it reaches this "second completion" it will return to Complete Torrents, but the "Completed On" date will NOT be updated. It remains set to the time of the first completion.
I keep my Complete Torrents list sorted by "Completed On", since it's the easiest way to keep track of what's newly-available. So it's a bit frustrating that incrementally-downloaded torrents end up staying buried way down the list, when they (re-)complete. If "Completed On" is going to be set for INcomplete torrents, then I would think it should be updated whenever they become MORE complete.

Sounds sweet, I'll check it out! Which beta build will/does it appear in?

I've added a new column (rather than mess with the existing one) that records the most recently complete file data - this should give you what you want while adding a little more information
